BROILED SNAPPER:
Ingredients
1# Vermillion snapper filet
2 tablespoons lemon juice
2 teaspoons grated lemon peel
1/2 teaspoon REAL salt
1 large garlic clove
1/2 teaspoon dried chervil
3-4 dill weed strands
1/4 teaspoon pepper
Directions
1. Combine the lemon juice, peel and seasonings in a blender and puree well into a chutney consistency; cover the fillets with the paste and place on a buttered glass oven dish.
2. Broil 4-6 in. from the heat for 3 minutes on each side or until fish flakes easily with a fork.
