DAIRY FREE VERSION:1 1/2 cups of pancake mix, 3 Eggs, 1 tsp Cinnamon, 1 Tbs Local Honey, 1/2 tsp baking soda, seltzer water.
Mix ingredients well excluding seltzer water. Once you have mixed ingredients to even consistency then add seltzer water to desired consistency for pouring/cooking pancakes (less water for thicker/more water for thinner consistency). Cook in coconut oil on hot griddle till golden brown. The seltzer water really gives it a fluffy consistency when cooked! I slather them with farm fresh butter and local honey! Delicious!
