Description
Echo Ridge Farm Grass Fed Veal Scaloppini With a typical serving being around a pound, veal scaloppini goes a long way on the table and cooks up in a flash. There is no waste on these trim cutlets that take well to a variety of sauces from creamy to piquant. Be careful not to overcook these thin cuts; a simple quick saute in the hot fat of your choice will keep them juicy.

Great flavor
Great flavor! I wish they were sliced thinner because the meat wasn't as tender as I hoped. Next time I will thin them before preparing. For a quick, delicious dinner, dress pieces with salt/ pepper & dredge in flour (tapioca if you're GF). Sautee in olive oil until browned, then remove. Deglaze the pan with some white wine and lemon juice, and then add back the veal. Simmer until veal is cooked / sauce is reduced to desired thickness. Pair with your favorite veggies and serve. Quick and easy!
